I am … Perfecting

Remember I talked about perfecting a Lime Cookie recipe that I can use with the Sweet Pressed cookie stamps? Well, I think I got it much better. The whole batch set up nicely, and most of them had the nice stamping on it. 🙂

My recipe started with the one in my Better Homes and Gardens Baking Book. I tweaked a bit, and came up with this.

  • 1 cup butter
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 teaspoon finely shredded lime peel
  • 1/4 cup lime juice (about 2 limes)
  • 1 teaspoon vanilla
  • 2-1/2 cup all-purpose flour

Preheat oven to 350 degrees Fahrenheit.

Soften butter (beat with mixer for 30 seconds or smash with wooden spoon). Cream with granulated sugar until combined. Add powdered sugar and mix until combined. Beat in lime peel and vanilla. Beat in lime juice, a little at a time. Make sure it is well incorporated if mixing by hand.

Add in the flour, adding the last bit by hand if using a mixer.

Chill dough for about 30 minutes.

Shape dough into about 1-1/4″ to 1-1/2″ balls. Place on parchment-lined cookie sheets. Press with cookie stamp.

Bake for 14-16 minutes, or until bottom edges turn brown.
